This is a dish my wife has been making every holiday for about 15 years now.
Everyone absolutely LOVES it. The combination of pineapple and cheese might sound strange, but you have to taste this to believe it. This is a perfect side dish for any holiday meal, especially if you are serving ham.
The recipe was handed down from a friend's grandmother, so I'll still give her the credit for it.


PINEAPPLE CASSEROLE

2 cans 20 oz. pineapple tidbits, drained.

1 cup sugar

4 Tbsp. Flour

6 Tbsp. Pineapple Juice (From the draining--this ingredient is optional)

2 cups Grated Sharp Cheddar Cheese (8 ounces)

1 Stick melted Margarine

1 cup Crushed RITZ Crackers

Mix the pineapple, sugar and flour and pour into the casserole dish. The mixture should look kind of "soupy" and shouldn't need the extra juice, but if it looks too dry add the 6 Tbsp. (or less) of the pineapple juice.
Mix together the cheese, melted margarine and crushed RITZ crackers. Spread this on top of the pineapple mixture in the casserole dish.
Bake at 350 degrees for 20-30 minutes.
