View Full Version : Kolacky - A Polish Pastry

I make these every holiday.
1/2 lb. butter
1/2 lb. cream cheese
2-1/2 cup flour
Preserves - Baker's choice (Strawberry & Peach are the most popular)
Mix butter, cream cheese & flour together until they're well blended. Make into a ball and place in the refrigerator for 1 hour (longer is no problem)
Pull off pieces and roll thin (1/8" or so). Best to use a flat surface coated with flour and coat the rolling pin with flour. After rolling cut in approx. 2"x2" squares. Place a teaspoon or so of preserves in the middle. Fold over 2 opposite corners and pinch close.
Bake 12 to 15 minutes at 400. Should be real light brown.
After baking, place them on a sheet of tin foil and sprinkle with powdered sugar.

Thanks for posting these Rybcon! They sound delicious and I am going make these. Always looking for a cookie that I can rely on. They sound much much easier than making Kruschiki.

My MIL makes these every X-mass, but the way she makes them are different, its a yeast bread with the fruit on top. I think I will have to try your way this year, they look better then my MIL's lol, more like a pasty then a round bread with jam on the top....

Well, they aren't as pretty as yours but they are YUMMY! Next batch I'll try to get them more uniform size and also not overfill them - a little jam definitely goes a long way, as I found out. Thanks again for the recipe - this one's a keeper!

The time of year to start baking again. After making several batches of white chocolate macadamia nut cookies, raisin oatmeal cookies, sugar cookies and chocolate chip cookies I think I'll make a couple batches of kolockys a little early this year. I have all the ingredients. I just need to pick a night? Wednesday? Maybe . . .

Rybcon, I made your recipe for Kolackys today. They came out great! I used prune and apricot fillings as those are popular for kolackys here. I brought them with to a gathering of friends this evening and everyone loved them.

That's great! I'm glad you and others enjoy them.
I thought this was funny. I've been eating kolackys for some 50 years. I've been making them for over 30 years. I had been told all those years that it was a "traditional" Polish pastry past on to my Mom from her Polish mother-in-law (my Busha). When Esterota joined the forum I told her I made kolackys every year. Her response? "What are those?" LOL
